Speyside whiskies are known as the Premier Cru of Single Malt Scotch. Distilleries in the Spey Valley use the soft water to produce elegant, fruity malts, which usually have a drying smokiness.

Aberlour Distillery was founded in 1879 on the site of an earlier distillery built in 1826.
Palate Very full, rich and tantalizing in flavour development. Sherry sweetness, cereal grain, malt, and a fruitiness are readily evident.
Finish Very rich, long and lingering. Some smoke is evident near the end.

Flora and fauna range.
pronounced ‘Ah-thrusk’). Built originaly to produce blendingwhisky for the J&B brand, It was discovered that it was also an excellent single malt, thus Singleton was born.
Very soft and sweet. Straight down the middle.

Aultmore 1995 70cl 40%

Aultmore (meaning "big burn" in Gaelic) gets its name from a nearby stream. It was built in 1896 by Alexander Edward, who also owned Benrinnes.
Palate Mellow and well-balanced. Some light fruitiness.

Situated in the village of Cromdale, one of the crossing points of the River Spey.
Palate Ample sherry, with honey and some spicy notes.

Benriach 1996 Connoiseurs Choice 70cl 40%

The founders of Benriach Distillery could not have selected a worse time to build a distillery. Established in 1897 or 1898, the whisky recession was but a couple of years away. It closed operations in 1900, not to open again until 1965.
Palate Medium dry, with cereal notes and a hint of spice.
Finish Medium in length. The floral notes come through again.

Benromach Distillery sits on the outskirts of the Royal Burgh and ancient market town of Forres.
Nose: Soft fruits – strawberries/blueberries, sweet creamy notes and a slight phenolic hint.
Palate: Cedar wood initially turning smoky – burnt toffee fruitcake.

Caperdonich was originally built as, and known by, the Glen Grant Number 2. It was founded in 1898, but was closed in 1902 due to the liquor industry recession. It remained closed until 1965 when it was rebuilt and named Caperdonich.
Palate Fruit and Marzipan finish the same with a hint of spice.

Craigellachie (pronounced "Craig-ella-ke") Distillery was founded in 1891. It was rebuilt and doubled to four stills in 1965. It is built on a hill overlooking the merger of the Spey and Fiddich Rivers.
Palate Sweet. Nutty with some maltiness and fruit coming through.
Finish Warm with some smokiness. Medium in length.

Convalmore Distillery was founded in 1894. Its name, as well as the water source, comes from the nearby Conval hills located just north of Dufftown.
Palate Full-bodied. Some sweetness with grain and spice.

The whisky from this distillery near Elgin is a favourite amongst blenders because of its consistently mature character and flavours.
This excellent middle-of-the-road malt, it has a superb nose - clean and delicate with herbal fragrances - which is confirmed on the palate. The finish is enjoyably long. A safe malt for almost everyone to try.

Dailuaine (pronounced Dal oo ayn)Except for some independent bottlings, the only single malts officially issued were limited bottlings released in 1988 or 1989.
Quite a distinctive malt with a lot of facets crowding together, spice, pepper, sweetness, malt and smoke

Situated to the south of Forres the distillery closed in 1992 and has been operating as a museum since then.
Now very rare the style is medium and slightly fruity.

The Glen of the Livet has clean spring water that makes especially delicate whiskies.
Subtle peatiness. Delicate. Slightly sweet and fruity, with vanilla notes. Clean and well-balanced.
Finish Long, but mild and warming. A trace of peat at the end.

Glendullan is one of several malts associated with the Old Parr blends which originated from Macdonald Greenlees.

Standing close to the sea at the mouth of the river Spey. The enterprise has its origins in 1825 but the Inchgower distillery was built in 1871 and expanded in 1966.
Complex aroma with a fruity and spicy taste with a hint of salt.

Built in 1897, by Thomas macKenzie, it coincided with Queen Victoria's Diamond jubilee, which was no doubt an influencing factor when naming the distillery. Mothballed in 1998.
Sweet and spicy, toasted malt flavours develop with a peppery edge. Subtle mulled fruitiness.

Very pale yellow color and an aromatic, fruity nose with an underlying dry, dusty quality. The palate is very smooth with a soft fruitiness. A very light and pleasant malt, perfect for summer evenings.

A functional Victorian distillery taking its water from Milbuies Loch. Roderick Mackenzie, distillery manager at one time, forbade the removal of even spider webs in case the quality of the whisky was adversely affected!.
The flavour begins delicately sweet and disappears leaving a sweet and sour impression. The sweetness and flavours are those of a fruit desert and would be ideal as an after dinner drink.
