The Highlands embraces many areas north of this line producing various styles of whisky: from spicy, aromatic whiskies such as Old Pulteney and Balblair in the North, to the fuller, slightly peaty and nutty whiskies of the South (Aberfeldy) and West (Glenlochy). The East coast distilleries, Glenesk and North Port included, produce a lighter, fragrant whisky.

The distillery known as Knockdhu (not Knockando) was founded in 1894 and is located about seven miles north of Huntly.
Palate Quite sweet, smooth, with some sweetness and fruity notes.
Finish Lingering, with some oiliness, smoke and sweetness.

The original Balblair Distillery was built in 1790 and claims to be the second oldest distillery in Scotland. The air in Edderton where Balblair Distillery is situated, is considered to be the purest in Scotland.
Sweet and lightly fruity with a toffee character. Superbly balanced with a round finish.

A full-bodied malt with aromas of raisin, green apple and hints of banana and lemon. The American oak barrels, used in the distillate’s maturation, lend a warm toffee, vanilla fragrance.

Regarded as a Highland Malt, the peat used in the distillation process actually comes from the Orkney Islands.

Brora is a "new" distillery in name only. Founded in 1819 as Clynelish Distillery, it was given the name "Brora' in 1969.

Palate Full with some sweetness. Rich with obvious peat and a hint of spice.
Finish Very lengthy with spice and a sooty, burned peat character.

Cardhu 12 year old 70cl 40%

Cardhu is an easy, light whisky that provides a comfortable introduction to the beginning student of single malts. The water supply for the distillery is piped from a site about two miles away, close to the location from where it gets its peat.

Mild on the nose displaying a slightly sweet and malty taste with a hint of smoke. An excellent introduction to single malts.

The Dalmore distillery was founded in 1839 and is located in a beautiful setting overlooking the Black Isle and the Cromarty Firth.

Deanston Distillery was established in 1965-66. It occupies facilities, however, that date back to 1785 which were utilized as textile mills until the early 1960s. It is located about two miles from the town of Doune.
Palate Some sweetness, malt, cereals and hint of sherry.
Finish Medium in length with a hint of sweetness.

This was the sixth distillery to be set up in Dufftown and the fourth in the 1890s.
Dufftown is light and low-key. It has some flowery elegance and a little bit of biscuity smoke; dry core, sweet edge, quiet but smooth finish.

To visit the Edradour distillery is to take a trip back in time when the "farm distillery co-operatives" were common. Edradour is the last such distillery in operation and dates back about 160 years.

The Deveron is the river valley and district on the eastern edge of Speyside. The distillery, on the banks of the river is called Macduff.
The nose is malty with hints of sherry and a faint nuttiness. The palate is very smooth, dry, malty, and has a clean freshness. The finish is brief with warming echoes of malt.

Before a rebuilding programme in 1966, Glengoyne was one of the smallest distilleries in Scotland.

Appearance: Golden yellow. Clear and bright
Nose: Sweet, with toffee and popcorn aromas. Slightly nutty, with fresh green apples coming through
Mouthfeel: Warming
Initial Taste: Clean. Green apples and grass with a hint of sweet liquorice
After Water: Sweeter. Linseed oil and almonds.
Finish: Sweet and malty
Comments: Great introduction to Glengoyne range.
